Spiced Shortbread Cookies

Spiced Shortbread Cookies
Ingredients:
1 1/2 cups unsalted butter, softened
1 cup sugar
1 teaspoon vanilla extract
3 cups all-purpose flour
1/2 teaspoon salt
1 tablespoon ground cinnamon
1 1/2 teaspoon ground ginger
3/4 teaspoon ground cloves

Directions;
In the bowl of a stand mixer, mix together butter and sugar until just combined.  Mix in the vanilla.

Mix together flour, salt, and spices.  With the stand mixer on low, add the flour mixture to the butter mixture, mixing just until  a dough starts to form.

Roll dough into 8 inch logs and freeze.

Baking the cookies:  Preheat the oven to 375*F.  Unwrap the dough and  cut into 1/2 inch rounds.  Bake for 15 to 18 minutes, until the edges begin to brown.  Makes about 3 1/2 dozen cookies.
