Applesauce Raisin Cake

This was such a famous cake in my childhood. I still enjoy the flavor and the memories it evokes! My grandmother Sitterly would buy this from her "Breadman" who delivered "Tony's" baked goods. A lovely way to begin 2021 reflecting on the life of a lady who shared her love with her family.
Ingredients:
1/2 cup shortening
2 cups sugar
1 egg, beaten with fork
2 cups applesauce
2 1/2 cups flour, sifted
1 1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 teaspoon cinnamon
1/2 teaspoon cloves, ground
1/2 teaspoon allspice, ground
1/2 cup water
3/4 cup raisins
3/4 cup chopped walnuts or pecans*, optional
Directions:
Preheat oven to 350*F.Cream shortening and sugar: then beat in egg, and applesauce.
Sift flour, baking soda, salt and spices. Whisk to mix well. Mix into applesauce mixture and blend. Stir in water and raisins.
Pour into a prepared 9 X 13 pan. Bake 45 to 50 minutes. Cool and cut into 2" squares. Icing not necessary. Yields: One 9 X 13" Cake
