Marinated Goat Cheese Appetizer

marinated goat cheese appetizer with olive oil and spices in an orange serving dish
Marinated Goat Cheese     Easy Peasy!
Marinated goat cheese with olive oil, thyme, and a bit of spice is one
of the easiest and most crowd-pleasing appetizers we know.  Serves 8
Ingredients
1 8- ounce (227-gram) log fresh goat cheese (chèvre)
¼ cup (60 ml) extra-virgin olive oil
2 teaspoons picked fresh thyme leaves
½ teaspoon red pepper flakes
1 teaspoon flaky sea salt, such as Maldon salt
¼ teaspoon freshly ground black pepper

Directions
Place the goat cheese in a small, shallow serving dish (or cut it in half and place it in two dishes).

Pour the olive oil overtop, and then sprinkle the goat cheese with the thyme, red pepper flakes, salt, and black pepper.

Leave to rest, covered with plastic wrap, for at least 30 minutes.
Serve with crackers or toasted slices of baguette.

Notes
Fresh goat cheese (also called chèvre) is creamy, tangy, and savory.
It’s so good on its own that marinating it is almost ridiculous — in the best possible way.
Use a good-quality extra-virgin olive oil, since you’ll really taste it.

Simple crackers and/or toasted baguette make a great accompaniment. Apple and pear slices would work well, too.
Chèvre plays well with a wide variety of flavors. Instead of (or in addition to) thyme, try: basil, chervil, chives, fennel seeds, garlic, lemon zest, mint, scallions, parsley, rosemary, sage, or tarragon. Spice blends like herbes de Provence, za’atar, or dukkah would be great. Beyond herbs, other great additions include chopped almonds, pistachios, walnuts, or pecans, a drizzle of honey, chopped olives, chopped dried apricots or cherries.
Prep this dish up to 24 hours in advance right in the serving dish, cover tightly and refrigerate if you’ll be keeping it for more than an hour or two. Pull it out of the fridge at least 30 minutes before serving.

Grilled Garlicky Smoked Gouda Potato Gratin
A riff on scalloped potatoes, this version with loads of garlic and gooey cheese is definitely amped up, taking the whole thing into gratin territory. It makes the perfect buddy for grilling alongside a barbecued main. Or, if you aren’t barbecuing, simply finish baking it in the oven at the same temperature.
Ingredients:
1 tablespoon butter for greasing
6 medium-size russet or Yukon Gold potatoes
1 1/2 cups (375 mL) whipping cream (35%)
1 cup (250 mL) chicken broth
8 roasted garlic cloves or 4 fresh garlic cloves, grated
1 bay leaf
1/2 tsp (2 mL) freshly ground nutmeg
1/2 tsp (2 mL) salt
1 small cooking or red onion, cut into rings
1 1/2 cups (375 mL) grated smoked Gouda, about 170 g
1 tbsp (15 mL) fresh thyme leaves (optional)
Directions:
Rub butter over bottom and sides of a 9 x 13-inch (23 x 33-cm) foil baking dish (with no holes). Peel potatoes, working quickly so they don’t brown. Using a very sharp knife, thinly slice potatoes so that pieces are no thicker than 1/4 inch (5 mm). This helps the potatoes bake faster. Or, for easier slicing, use a mandoline or food processor to slice potatoes. Even though these cuts can be done with a knife, using a mandoline is quicker and more precise. Always use the safety guard to hold the potato in place, then slide it back and forth over the blade.

Pour whipping cream and broth into a large pot. Stir in garlic, bay leaf, nutmeg and salt, then add potatoes, separating slices as you add them. Bring to a boil, covered, over medium-high heat. Uncover. Simmer gently, stirring occasionally, until potatoes are almost fork-tender, 10 to 13 minutes. Discard bay leaf. Turn potato mixture into baking dish. Press so potatoes are completely submerged.

Scatter onion and cheese overtop. Cover tightly with foil. If making ahead, let cool then tuck in the fridge up to 1 day. Bring to room temperature before proceeding with next step.

Preheat one side of barbecue to medium or medium-low so the temperature is 325°F (163°C).

When ready, place baking dish over hot side of grill and cook, covered, until hot, 15 to 20 minutes. Uncover and continue baking until cheese melts, mixture is bubbling and edges are golden. Remove from heat. Re-cover and let stand at least 15 minutes. Serve topped with thyme. Makes 8 to 10 side-dish servings.

Butternut Squash Soup With Apples And Bacon

Butternut Squash Soup
With Apples and Bacon
Ingredients:
4 slices bacon,, cut crosswise into 1/4 - inch strips
1/4 cup chopped shallots
2 1/2 lb.. butternut squash (about 1 medium), peeled, seeded, and cut into 1/2 - inch dice (to yield about 6 cups) or use 3 bags already cubed squash
1 small Granny Smith or other tart - sweet apple,, peeled, cored, and cut into 1/2 - inch dice (to yield about 1 cup)
1 tsp.. curry powder
1 tsp.. kosher salt
1/2 tsp.. freshly ground black pepper
4 cups low sodium chicken broth
1 T. chopped fresh thyme leaves

Directions:
In a large Dutch oven or soup pot set over medium heat,, cook the bacon, stirring occasionally,, until crisp and golden, 8 to 10 minutes.  Use a slotted spoon to transfer the bacon to a plate lined with paper towels.

Increase heat to medium high.. Add the shallots and squash to the pot with the bacon fat and cook until lightly browned, 4 minutes (resist the urge to stir it too  often or it won’t brown).

Stir in the apple, curry, salt, and pepper and cook for about 4 minutes.  Add the broth, scraping up any browned bits in the pot with a wooden spoon. Bring to a boil over high heat, reduce the heat to maintain a simmer, and cook until the squash and apples are very soft, 6 to 8 minutes.

Puree soup with an emersion blender until almost smooth. Stir in the thyme and half the bacon.  Season to taste with salt and pepper.  Reheat the soup and garnish each serving with the remaining bacon.

Harvest Nachos With Squash, Brussei

Harvest Nachos with Squash,
Brussels Sprouts & Smoked Cheddar
Breaking out of its Tex-Mex shackles, Harvest Nachos finds crunchy tortilla chips baked under a bed of two cheeses, roasted fall veggies, dried cranberries and fresh thyme. If you cut the vegetables and grate the cheeses ahead of time, the whole dish comes together in under an hour. It is important to layer nachos so the last bite is as good as the
first.  Serves 8
Ingredients:
3 cups (750 mL) diced butternut squash, cut into ¾-inch (2-cm)
   cubes
1 lb (455 g) Brussels sprouts, trimmed, quartered through core
2 tbsp (30 mL) canola oil
Salt and freshly ground pepper to taste
2 tbsp (30 mL) red wine vinegar
2 tbsp (30 mL) water
2 tsp (10 mL) sugar
1 large shallot, thinly sliced into rings
1 lb (455 g) sturdy tortilla chips
½ lb (225 g) smoked cheddar, grated
½ lb (225 g) Swiss melting cheese (Emmenthal, Appenzeller,
    Gruyère), grated
½ cup (125 mL) dried cranberries
3 tbsp (45 mL) fresh thyme leaves
Lemon wedges for serving

Directions:
Preheat oven to 450°F (230°F).

In a large mixing bowl, combine squash, Brussels sprouts, oil, salt and pepper. Mix thoroughly and transfer to a heavy-duty baking

sheet lined with parchment paper. Bake on lower rack, stirring twice, until browned and soft, about 25 minutes. Remove from oven.

Lower temperature to 350°F (180°F).

While the vegetables are roasting, whisk vinegar, water, sugar and a pinch of salt in small bowl until sugar is dissolved. Stir in shallot. Set aside, stirring occasionally.

Line a heavy-duty rimmed baking sheet with foil. Spread out half the chips and sprinkle with half the cheese, half of the roasted vegetables, cranberries and thyme. Repeat with a second layer using up remaining half of chips, cheese and toppings. Bake until cheeses are melted and nachos are hot, 15 to 20 minutes.

Remove from oven. Drain shallots and sprinkle over nachos. Serve immediately with lemon wedges.

Halibut In Summer Citrus Seafood Marinade

Halibut In Summer Citrus Seafood Marinade
Ingredients:
1/4 cup Herbs de Provence EVOO
2 Tbsp Grapefruit White Balsamic Vinegar
4 Pieces (4oz each) of halibut
2 Sprigs fresh thyme, leaves only

Directions:
In a shallow dish, whisk together the olive oil and balsamic to emulsify. Coat each piece of fish in the marinade and then place in an 8"x8" baking pan. The fish should be crowded in the dish. Drizzle the remaining marinade over the top and place in the fridge for 20 minutes.

Preheat oven to 375*F or barbeque to high. Let the halibut rest on the counter for 2 minutes before you are ready to cook it, then place it on a rimmed baking tray in the oven or barbeque.

Cook until flaky and cooked through, ensuring the edges are crisp, 10-15 minutes in the oven and around 7-10 minutes on the barbeque. Sprinkle the thyme leaves over the cooked halibut.

Serve with a citrus chutney on a bed of rice or grilled potatoes.  Enjoy!
