Chef Tips for Perfect No-Cook Beet and Lentil Salad Recipe

Achieving the perfect flavor in your No-Cook Beet and Lentil Salad Recipe requires attention to hydration and seasoning balance. These professional tips will ensure your version is the best version of this classic dish.

Toast your walnuts in a dry pan for three minutes before adding them to the No-Cook Beet and Lentil Salad Recipe to amplify their nutty depth.
Marinate the lentils in half the dressing for thirty minutes before adding the beets to allow the legumes to absorb maximum flavor.
Always use fresh lemon juice rather than bottled concentrate, as it provides the brightness required for a top-tier No-Cook Beet and Lentil Salad Recipe.

Adjust the seasoning with an extra pinch of sea salt if the beets are particularly sweet to provide necessary balance to the salad.
Use room temperature ingredients if possible, as cold ingredients sometimes mask the delicate herbs included in this No-Cook Beet and Lentil Salad Recipe.

Common No-Cook Beet and Lentil Salad Recipe Mistakes to Avoid

Avoiding common errors ensures the consistency and flavor of your No-Cook Beet and Lentil Salad Recipe remain top-tier throughout the entire week of meal prep. Address the following issues to keep your dish from failing.

Leaving the lentils wet from the can will ruin the texture of the No-Cook Beet and Lentil Salad Recipe, so always pat them dry with a towel.

Over-tossing the salad causes the soft beets to break down and turn the entire mixture pink, which affects the presentation of the salad.
Ignoring salt content creates a bland experience, so taste your No-Cook Beet and Lentil Salad Recipe before serving to ensure the seasoning is correct.

Storing the dressing on the greens too early makes them limp, so add the final dressing components just before you plan to serve the salad.

Muhammara Dip. ~. Vegan

Muhammara Dip
A simple, flavorful Middle Eastern Dip called Muhammara, with roasted peppers, garlic, parsley and pomegranate molasses (recipe below) , that can be made ahead! Serve with toasted pita or crackers.
Ingredients
3 roasted red bell peppers ( from a jar, or roast and peel your own)
1/4 cup Italian parsley
1 clove garlic
1 teaspoon freshly squeezed lemon juice
1–2 teaspoons ground cumin
1/2–1 teaspoon kosher salt, more to taste
1 tablespoon pomegranate molasses, more as needed (see recipe in the notes)
1 teaspoon Aleppo chili flakes (or try Urfa Biber or regular chili flakes), and more to taste
1/4 cup olive oil
1–2 teaspoons honey, more to taste
1 cup fresh walnuts, lightly toasted
1/2– 3/4 cup bread crumbs
Garnish:
1-2 tablespoons olive oil, crushed walnuts, pomegranate seeds, Italian parsley leaves or mint leaves. Serve with warm pita bread or crackers.

Directions
If using canned roasted peppers, rinse and pat dry well. Place all ingredients except the walnuts and bread crumbs into a food processor, and repeatedly pulse until chopped and combined but not completely smooth. Leave a little texture.

Add toasted walnuts and bread crumbs and pulse until combined, but again, not too smooth.
If it seems dry or thick, add a little more olive oil as needed.

Taste and adjust salt, honey and chili flakes to your liking.

At this point feel free to refrigerate, covered, up to 2 days ahead, allowing flavors to meld and enhance.

Before serving, bring to room temp. Place in a medium bowl. With the back of a spoon make a circular well in the dip and drizzle olive oil into the well. Top with more crushed toasted walnuts, fresh pomegranate seeds and a few parsley or mint leaves. Serve with warm toasty pita or crackers.
Note

To make 1/4 cup of pomegranate molasses, place 1 cup of 100 % pomegranate juice, 2 tablespoons sugar, and 2 teaspoons lemon juice into a small pot on the stove. Stir over medium heat until the sugar dissolves, then simmer gently over medium-low or low heat, uncovered, until it has reduced all the way down to 1/4 cup. The more gently you simmer, the less bitter it will be. It will thicken as it cools.

Eggplant Walnut Dip. ~. Vegetarian

Eggplant Walnut Dip
Everything you will need to make this awesome Dip

Ingredients:                                                    Garnishes
1 large eggplant or 2 small                              EVOO
2 small cloves garlic                                        Sumac
⅓ cup Greek yogurt or sour cream                  Ground cumin
¼ cup walnuts toasted                                      Chili flakes
2 tbsp tahini, heaped tbsps                               Parsley or mint
1-2 tbsp lemon juice                                         Pomegranate molasses
salt and pepper as needed                                 Toasted Walnuts

Serving Suggestions
cut raw Veggies
Pita or pita chips

Directions:
Preheat the oven to 400°F and line a baking sheet with parchment paper.

Cut the eggplant in half lengthwise and place both halves face down on the baking sheet. Pierce the eggplant halves a couple more times so the steam can escape.** see notes for roasting on a bbq.
Bake eggplant until very soft, blackened and wrinkly on the exterior, about 40-45 minutes. Remove eggplant and let cool slightly

In a food processor, pulse the walnuts until they are finely ground. Next to the food processor, add the tahini, yogurt, lemon juice, cumin, garlic,, salt, and pepper. Process until smooth and creamy.

Once cooled scoop the soft flesh out of the cooled eggplant and transfer it to the food processor. Pulse the food processor motor a few times until you have a slightly chunky, but mostly smooth and luscious dip, scraping the sides down if necessary.

Adjust the dip for seasoning if necessary. Transfer the dip to a shallow bowl, spread it in concentric circles making a couple of deeper trenches for the beautiful olive oil and garnishes to accumulate. Garnish with sumac, chili flakes/paprika, ground cumin, parsley, olive oil, and pomegranate molasses if using.

Serve the dip at room temperature with vegetable crudies, pita chips or crackers or part of a summer meal with meatballs, Shirazi salad and pitas.

To roast the eggplant on a bbq simply stab the eggplant a 4-5 times and place it on the bbq. Rotate as it gets charred so it chars evenly. Roasting on a bbq produces intense smokiness.

Piercing the eggplant helps release steam that builds up inside the eggplant (due to the intense heat and natural high moist content of the eggplant) and prevents bursting. (true story, happened to me)

The mentioned garnishes all very delicious, but you don’t need all of them. A simple drizzle of olive oil and black pepper works just as well

Air Fryer Pomegranate-Glazed Salmon

Air Fryer Pomegranate-Glazed Salmon
Pomegranate lends its sweet-tart essence and ruby hue to this impressive weeknight dinner or special-occasion main dish in two ways: First, pomegranate molasses is the base of a fruity glaze for the salmon fillets, resulting in perfectly caramelized exteriors. While the fish cooks, we toss together a bold and colorful relish of pomegranate arils, cilantro and spicy serrano chiles to cut through the richness of the salmon. And since it's ready in just about 20 minutes, you'll have plenty of time for your guests or family.
Ingredients:
2 tablespoons pomegranate molasses
1 1/2 teaspoons sweet chili sauce
1 1/2 teaspoons low-sodium soy sauce
1 clove garlic, grated
2 teaspoons honey
Juice of 1 lime
Kosher salt and freshly ground black pepper
Four 8-ounce center-cut skinless salmon fillets
1/2 cup pomegranate arils
1/4 cup fresh cilantro leaves, finely chopped
1 tablespoon olive oil

Directions
Whisk the pomegranate molasses, sweet chili sauce, soy sauce, garlic, 1 teaspoon of the honey, half of the lime juice, 1/4 teaspoon salt and a few grinds of pepper in a medium bowl until combined.

Brush the glaze on top of the salmon fillets and season each with 1/4 teaspoon salt and a few grinds of pepper.

Arrange the fillets in the basket of a 6-quart air fryer, making sure they are not touching. Cook at 400 degrees F until the tops are dark golden brown in spots and caramelized all over and the salmon easily flakes with a fork when gently pressed, 6 minutes for medium rare and 7 minutes for medium.

Meanwhile, combine the pomegranate arils, cilantro, olive oil, serrano, remaining 1 teaspoon honey, remaining lime juice, 1/4 teaspoon salt and a few grinds of pepper until well combined.

Transfer the salmon to a serving platter and spoon the pomegranate relish over top.  Serves 4

Cook’s Note
Settings may vary on your air fryer depending on the model. Please refer to the manufacturer’s guide.

Pomegranate Marinated Flank Steak

Grilled flank steak slices on a sheet pan with grilled peppers

Pomegranate Marinated Flank Steak
The longer the flank steak marinates, the more flavorful it will be. Use the ziploc bag to keep the meat and vegetables fully coated in the marinade. Be sure to cut against the grain when slicing the meat. For the dipping sauce, never use the marinade from the steak; instead set aside a separate, unused portion of the sauce from the outset.
Ingredients:
1 1/2 pounds flank steak
2 teaspoons kosher salt
1 teaspoon black pepper
3/4 cup pomegranate molasses
1/3 cup extra virgin olive oil
1/2 teaspoon ground mustard
3 tablespoons brown sugar
1/2 teaspoon granulated garlic powder
1 orange bell pepper, sliced in 1-inch rounds
1 red bell pepper, sliced in 1-inch rounds
1 vidalia onion, sliced in 1-inch rounds
2 tablespoons neutral oil, such as canola, avocado, or safflower, to coat the grill

Directions:
With a fork, prick the flank steak all over. Season both sides of the steak with the salt and pepper.

In a small bowl, whisk the pomegranate molasses, olive oil, mustard, brown sugar, and garlic powder. Set aside about 1/3 of the sauce to use when serving the meat after grilling.
Pour the rest of the marinade in a gallon ziploc bag. Add the flank steak, pepper slices, and onion slices. Pushing out as much air as possible, close the bag and refrigerate the meat for at least 12 hours and up to 24 hours.

To grill the meat, coat the grill grates with the neutral oil using tongs and a bit of paper towel. Heat the grill to medium high.
Once the grill is hot, lay the flank steak, pepper and onion on the oil-coated grates. Grill for 6- to 8 minutes, then flip the steak and vegetables. Grill for another 6 minutes, or to 150 degrees at the center of the steak.

Brush the finished steak with some of the reserved sauce while it rests for 15 minutes. Slice the steak on an angle against the grain, and serve with more of the reserved sauce over top or on the side.

Roasted Figs With Pomegranate
Molasses And Orange Zest
This recipe makes such a wonderful dessert!
Ingredients:
3 tablespoons pomegranate molasses
1 tablespoon lemon juice
3 tablespoons dark muscovado sugar
4 thyme sprigs, 2 whole and 2 with
   leaves stripped
1 orange, one half stripped and the
   other half zested
8 ripe figs, cut in halves lengthwise
1/2 cup marscapone
1/2 cup Greek yogurt
1 tablespoon confectioners sugar
Salt
*
Directions:
Place the pomegranate molasses, lemon juice, 1 tablespoon of sugar, 2 whole thyme sprigs, 1 tablespoon water, and the orange rind strip in a large bowl with a pinch of salt.  Mix well to dissolve the sugar and then stir in the figs.  Set aside to marinate for 30 minutes.
*
Place the marscapone, yogurt, and confectioners sugar in a small bowl and whisk until smooth.   Set aside in the refrigerator until ready to use.
*
Preheat the broiler.  Remove the figs from the bowl keeping the marinade and arrange them snugly, cut side up, in a shallow baking dish, 8 inches in diameter.  Sprinkle the figs with the remaining 2 tablespoons of sugar and place them under the hot broiler.   Don't put them too close to the heat source or they will burn.  Broil for 10 minutes, until the sugar has caramelized and the figs have softened.
*
Meanwhile pour the marinade into a small saucepan and bring to a boil, and simmer for 2 to 4 minutes, until the sauce is reduced by half and has a consistency of runny honey.
*
Transfer the hot figs to seeing plates and spoon any syrup left over in the baking sheet over the top.  Drizzle the sauce reduction over the figs, then sprinkle with the picked thyme leaves.  Place a spoonful of the yogurt cream on top or alongside the figs, sprinkle with the orange zest and serve.

yellow or red or both, halved *see note

1/3 cup flat leaf parsley leaves
1/2 cup mint leaves
seeds of 1 small pomegranate (1/2 cup)
1 1/2 tablespoons pomegranate molasses
1/2 small red onion, thinly sliced (about 1/2 cup)
Salt and freshly ground black pepper
*

Preheat oven to 325 F.

Bring a small pan of water to a boil, add the lemon slices and blanche them for 2 minutes.  Drain well and place the lemon in a bowl and add 1 tablespoon of the oil, 1/2 teaspoon salt, the sugar, and the sage.  Gently mix and spread the mixture out on a baking sheet lined with parchment paper.  Place in the oven and bake for twenty minutes until the lemons have dried out a little.  Remove and set aside to cool.

NOTE  Place ("sandwich") tomatoes between two lids.  I use Cool Whip lids as they have a flat surface with a lip.  Place the bottom lid top side down and the top lid top side up.  Lay the knife horizontal and slice horizontally through the lids.  All tomatoes are sliced.
