Black Lentil Crackers ~. Gliuten Free

Black Lentil Crackers  ~  Gluten Free
These crackers are gluten free.  The dough made without wheat flour is super crisp and full of texture.  Chia seeds and their gel producing quality produce the dough.  To make them studier for dipping, rice flour is added.  The flavor as is tastes great but, za'tar, cumin, oregano, or smoked paprika can be added.
Ingredients:
1 cup rice flour
1/4 cup chickpea flour
1/2 cup black lentils, soaked overnight and drained
1/2 cup sunflower seeds
1/4 cup chia seeds
1/4 cup sesame seeds
2 teaspoons kosher salt
1 teaspoon fresh rosemary
2 tablespoons EVOO
Boiling water
Directions:
In a medium bowl mix the rice flour and the chickpea flour, black lentils, sunflower seeds,  chia seeds, salt, fresh rosemary, and EVOO.  

Pour 1 cup of boiling water over mixture and stir to thoroughly mix.  Allow to stand for 10 minutes.  Cover and refrigerate for at least 1 hour.

Preheat oven at 350*F with rack set in lower 3rd of oven.  

Scoop the dough onto a standard sheet of parchment paper, 12" x 17".  Place another sheet 12" x 17" on top and roll out the dough.  If the dough comes out of the sheets, pinch it off and place it back in where needed.

Peel off the top layer of parchment paper and transfer the dough still on the bottom sheet of parchment paper to a cookie sheet with sides.  Bake on the lower third rack of the oven until it feels dry to the touch and lightly browns, about 1 hour.

Remove from oven and turn over on baking sheet: peel the paper.  Return it to the oven to brown the other side, about 15 minutes.  Remove to a cooling rack and let cool.  It should crisp up as it cools.

Break it up in large pieces and serve immediately or store in airtight container at room temperature for up to 1 week.

NOTE:  I made the chickpea flour and the rice flour in my Vita Mix.   The garbanzo flour was about a 2 to 1 when ground.  The rice was about 1 1/4 to 1  When ground fine, strain through a fine sieve and place in a sealed container until ready to use.

Moroccan Sesame Cookies

Ghoriba Dial Janjlane 
(Moroccan Sesame Cookies)
Golden, nutty and irresistibly crumbly, ghoriba dial janjlane are Moroccan sesame cookies that are humble yet celebratory. Toasted sesame seeds give them a deep, earthy flavor, while their rustic texture makes them the perfect companion to a cup of mint tea.
Ingredients:
1 1/4 cups (310 mL) sesame seeds
1 1/2 cups (375 mL) all-purpose flour
1 tsp (5 mL) baking powder
1/2 tsp (2 mL) salt
1/2 cup (125 mL) unsalted butter, softened
1/2 cup (125 mL) sugar
2 large eggs
1 tbsp (15 mL) orange blossom water
Finely grated zest of 1 medium-size lemon
Directions:
Arrange rack in middle of oven. Preheat to 350°F (177°C). Line two
baking sheets with parchment paper.

In a dry pan over medium heat, lightly toast sesame seeds, stirring
often, until golden brown and fragrant, about 5 minutes. Transfer to a
small, rimmed baking sheet. Stir occasionally, until completely
cooled.

Return pan to medium heat and add flour. Cook, stirring constantly
until lightly golden, 4 to 5 minutes. Transfer to another small,
rimmed baking sheet. Stir occasionally, until completely cooled.

When seeds are cooled, place 1 cup (250 mL) sesame seeds in a
food processor. Process until finely ground. Transfer to a mixing
bowl along with cooled flour. Add baking powder and salt. Stir until
combined.

In bowl of a stand mixer fitted with paddle, beat butter and sugar
on medium-high speed until light and fluffy, 3 to 4 minutes. Reduce
speed to medium. Add eggs one at a time, mixing well after each
addition. Stop and scrape down bowl. Add orange blossom water and
lemon zest. Mix until combined. With motor running on low speed,
gradually add dry ingredients, mixing just until a dough forms—it
should be soft but not sticky.

Place remaining 1/4 cup (60 mL) sesame seeds on a small plate.

Roll 1-tbsp (15-mL) portions of dough into balls. Roll balls in
sesame seeds to coat evenly. Place on lined baking sheet and gently
press to flatten slightly. Repeat with remaining dough, leaving at
least 1/2 inch (1 cm) between cookies.

Bake cookies, one sheet at a time, on middle rack until edges are
lightly golden, 13 to 15 minutes. They will still be soft in centres,
but will firm up as they cool. Remove from oven and cool
for 5 minutes before transferring to a wire rack to cool completely.

Transfer to an airtight container and store in a cool, dark place for up
to 5 days. Makes 30 cookies

Sesame And Miso Cookies

Sesame & Miso Cookies
Miso paste is so good in bakes, especially when white chocolate and tahini are in the mix.
Ingredients:
1 cup unsalted butter, softened
7/8 cup light muscovado sugar
1/3 cup caster sugar
2 tablespoons Tahini
2 tablespoons white miso paste
1 medium egg
1 medium egg whites
2 1/2 cups plain flour
1 tsp baking soda
½ tsp fine sea salt
¼ tsp ground cinnamon
1 1/8 cup white chocolate, roughly chopped
1/2 cup sesame seeds
Sea salt flakes, for sprinkling
Directions:
In a large bowl, use an electric hand mixer to beat together the butter and both sugars for 2-3 minutes until light (or use a stand mixer). Add the tahini, miso, whole egg and egg white and mix again until smooth. Sift in the flour, bicarbonate of soda, salt and cinnamon; mix again until just combined. Stir in the chocolate until combined. Cover the bowl and chill the dough for at least 2 hours but preferably overnight.

When ready to bake, preheat the oven to 375*F, and line 2 large baking sheets with baking parchment.  Scoop and roll the chilled cookie dough into even-sized balls, each weighing 2 ounces (Golf ball size.  Place the sesame seeds onto a tray or into a large shallow bowl and roll each in the seeds to coat.

Place 5-6 dough balls on each lined baking sheet, leaving plenty of space for them to spread during cooking. Slightly flatten each with your fingers, sprinkle with a pinch of sea salt flakes and bake for 16-18 minutes until golden.

Sharply tap the underside of the baking sheets on the work surface to slightly deflate the cookies. Allow to cool for 5 minutes on the sheets, then transfer to a cooling rack. Repeat with the remaining dough.

Cook’s tip:
To give the cookies neat edges, one at a time, upturn a glass or ramekin over the top of them. With a circular motion, swirl the hot/warm cookies against the inside edge of the glass or ramekin.

Salad Tacos

Called Salad Tacos because they are a salad in the Taco.
Ingredients:
Spread choices:
Hummus,  Tahini Sauce (not paste),  Baba Ganoush, Spread  
Lemony Salad,
Toasted chickpeas:
2 tablespoon EVOO
1 can chickpeas, drained and rinsed
1 teaspoon sumac
1 teaspoon cumin,
1/4 - 1/2 teaspoon salt
1 - 2 teaspoons sesame seeds
Assembly:
1/2 cup spread choice
1 tomato choice 
2 Turkish cucumbers
Large handful arugula 
1 - 2 tablespoons EVOO
1 - 2 tablespoons lemon juice
Garnish:
Scallions,, sliced in slivers,
Fresh herbs choice,  cilantro, Italian parsley, mint, dill,  Dukkah,  Zaatar, Tahinni, quick pickled onions, 
Directions:
Use the spread of choice.  Recipes are available online.

Drain can of chickpeas and rinse and drain well.  In a medium heat skillet, add oil and chickpeas and spices and salt, stirring frequently.  During the last minute add the sesame seeds.  Turn the heat off.

Toss the salad ingredients in medium bowl.  Lightly toast the tortillas until warm and pliable.  

Assemble:  Spread hummus, baba ganoush, onto the warm tortillas.  Top with warm chickpeas and a heaping mound of the salad.  Sprinkle with herbs and scallions.

Cherished German Rolls

Start your day the German way — with freshly baked crusty bread rolls. Brötchen are the ultimate treat: crispy and crunchy on the outside, soft and fluffy on the inside — just like the ones from a traditional German bakery.  They’re a true German staple, often hard to find abroad — but now, you can make them yourself!
Ingredients:
2 teaspoon instant yeast
2 teaspoon honey
350 ml water. (1 1/4 cups)
500 g all-purpose flour 
1 ½ teaspoon salt
Optional Toppings
2 tablespoon poppy seeds
2 tablespoon sesame seeds

2 tablespoon sunflower seeds

Directions:
Prepare the bread/roll dough: Add the honey to lukewarm water and stir until fully dissolved. Then add the yeast and let it sit for about 10 minutes. In a large bowl, combine the flour and salt. Pour in the yeast mixture and stir with a wooden spoon until a thick, sticky dough forms. Place the dough in a lightly oiled container, and leave it to rest in the fridge 8-12 hours.

Shape the Breadrolls The next morning, preheat your oven. For best results, use a pizza stone, but a standard baking sheet will work too. Carefully turn the container upside down and let the dough gently slide out. Use a knife or dough scraper to divide the dough into 6–8 equal portions. Shape each roll by folding the corners into the center to form a round shape. Optional: If you'd like to add seeds (e.g., sesame, poppy, or sunflower), pour some onto a plate. Brush the top of each roll lightly with water using a pastry brush, then dip the damp surface into the seeds.

Bake the rolls until crusty: Place the rolls seam-side down on a parchment-lined baking sheet or pizza stone. Before baking, place an oven-safe bowl filled with water on the bottom rack of your oven. The steam will help create a beautiful, crusty exterior on the rolls. Bake for 20–25 minutes, or until the rolls are golden brown and sound hollow when tapped on the bottom.

Cold Ramen Noodle. Salad With Napa Cabbage And Ginger Miso Dressing

Cold Ramen Noodle Salad With Napa
Cabbage & Ginger-Miso Dressing
A mash-up of slaw and pasta salad, this vegan dish features instant ramen noodles and crunchy raw vegetables in a gingery, umami-packed dressing. An optional garnish of shiso or perilla leaves lends a uniquely herbal flavour. Togarashi is a Japanese spice blend that includes hot pepper, orange peel and sesame seeds. Shiso, perilla and togarashi can be found at select Asian supermarkets.
Ingredients:
Ginger Miso Dressing
2 tbsp (30 mL) chopped ginger
2 tbsp (30 mL) white miso
2 tbsp (30 mL) soy sauce
1 tbsp (15 mL) granulated sugar
1/4 cup (60 mL) rice vinegar
1/4 cup (60 mL) canola oil
2 tbsp (30 mL) sesame oil
Salad
3 single-serve pkgs (100 to 120 g each) instant ramen noodles, flavour packets discarded or saved for another use
5 cups (1.25 L) packed thinly sliced Napa cabbage
1 red Shepherd or bell pepper, julienned
1 medium-size carrot, peeled, julienned
3 green onions, green parts only, thinly sliced on bias
Salt to taste
Roasted sesame seeds and finely sliced shiso or perilla (optional) to garnish
Shichimi or Nanami togarashi to serve

Directions:

For the dressing, combine ginger, miso, soy, sugar and vinegar in blender. Blend until smooth. With motor running, add oils in a slow, steady stream until emulsified. Scrape down bowl and blend again. Transfer to an airtight container. Refrigerate up to 1 month. Stir before using.

Bring a large pot of lightly salted water to a boil. Add ramen and cook according to instructions on package. Drain and rinse under cold running water until cooled. Drain again and transfer to a very large mixing bowl. Blot excess moisture from ramen with paper towel.

Add cabbage, pepper, carrot and green onions to bowl. Season lightly with salt. Add enough dressing to coat, saving rest for another use. Using tongs, toss salad until well mixed.

Transfer to a serving bowl. Sprinkle with sesame seeds and top with shiso or perilla, if using. Serve with togarashi on the side.  Serves 6 to 8

Paleo Granola

Ingredients:
1 cup coconut chips
!/2 cup unsweetened Grated coconut
1/3 cup cacao nibs
1/3 cup honey
1/3 cup extra virgin coconut oil
1 teaspoon ground cake spices w/ pinch black pepper
1 teaspoon ground cinnamon
1/2 teaspoon sea salt
Zest of an organic lemon
1 pound and 2 ounces mixed:  hazelnuts, sesame seeds, sunflower seeds, hemp, pecans, walnuts, pumpkin seeds, cashews

Directions:
Preheat oven to 320*F.  Line a rimmed baking sheet with parchment paper or silicone baking mat.

Place the nuts in the bowl of a food processor or blender, and process using short pulses until roughly chopped, stirring every few pulses, for even chopping.  The goal is to have bigger and smaller bits.  Pour into a mixing bowl.

Add the remaining ingredients and stir vigorously until well combined.  Pay particular attention to the honey and coconut oil: they will tend to remain as individual wads, and you need to coax them into mingling with the other ingredients.

Pour out onto the prepared baking sheet and spread out evenly.

Bake for 25 to 30 minutes, stirring every ten minutes, until golden brown.

Let the granola cool completely on the sheet -- it will crisp as it cools -- then transfer to an airtight container.  It will keep for 3 weeks at cool room temperature or a couple of months in the refrigerator.

Sesame Salad Dressing

Sesame Salad Dressing
This homemade sesame dressing offers bold flavor for your homemade salads. It requires just four core ingredients: toasted sesame oil, tamari or soy sauce, lime juice, and a dab of Dijon mustard. If you have the time and energy, add freshly toasted sesame seeds, fresh ginger, and garlic. They ramp up the flavor, but this dressing is already delicious in its simplest form.
Ingredients:
1 tablespoon sesame seeds (optional, for texture and flavor)                                                 ¼ cup toasted sesame oil
2 tablespoons reduced-sodium tamari or soy sauce
2 tablespoons lime juice
2 to 3 teaspoons finely grated fresh ginger
1 clove garlic, pressed or minced
½ teaspoon Dijon mustard
Pinch of red pepper flakes (optional, for spice)
Directions:
If using the optional sesame seeds, place them in a small skillet over medium-low heat and cook, stirring frequently, until they’re starting to turn golden, about two to three minutes. Remove from 
the heat.
n a liquid measuring cup or small bowl, combine the sesame oil, tamari, lime juice, 2 teaspoons of ginger, garlic, mustard, optional red pepper flakes, and optional toasted sesame seeds.
Whisk until the mixture is well blended. Taste, and if the flavor isn’t quite there yet, whisk in the tiniest pinch of salt. If you would like stronger ginger flavor, mix in the additional teaspoon now.
This dressing can be served immediately, but the flavors are even better after twenty minutes’ rest. Store the dressing in the refrigerator, covered, for up to 1 week.

Jasmine tea brings its delicate fragrance to an easy brine for pork tenderloin. A sweet-savory dry rub adds another layer of flavour before it hits the grill. Finally, a fresh, crunchy salad of cool cukes and tender herbs is like a rug that ties the room together. Serves 4
Ingredients:
1 1/2-inch (4-cm) knob ginger, halved lengthwise
1 tbsp (15 mL) sugar
3 tsp (15 mL) fine sea salt, divided
4 cups (1 L) boiling water
4 bags jasmine tea
2 pork tenderloins, each 12 oz (340 g; or 24 oz/680 g total)
3 tsp (15 mL) brown sugar, divided
1 1/2 tsp (7 mL) cumin
1 1/2 tsp (7 mL) paprika
3/4 tsp (4 mL) ground ginger
2 tbsp (30 mL) canola oil
2 tbsp (30 mL) fresh lime juice
4 tsp (20 mL) soy sauce
1 lb (455 g) mini cucumbers, about 7, cut into 3/4- to 1-inch (2- to 2.5-
   cm's chunks.
1 1/2 cups (375 mL) mint leaves
1 1/2 cups cilantro leaves
Toasted sesame seeds to garnish

Directions:
Place ginger, sugar and 2 tsp (10 mL) salt in a large bowl. Pour boiling water overtop and stir to dissolve sugar and salt. Add jasmine tea bags and stir once more. Set aside and cool to room temperature. Remove tea bags. Immerse pork, cover and refrigerate for at least 3 hours or up to 6 hours.

Remove pork from brine. Pat dry with paper towel. Cover and refrigerate up to 1 day. Discard brine.

To make dry rub, mix 1 1/2 tsp (7 mL) brown sugar, cumin, paprika, ground ginger and 1/2 tsp (2 mL) salt in a small bowl. Set aside.

To make the dressing, place oil, lime juice, remaining 1 1/2 tsp (7 mL) brown sugar and 1/4 tsp (1 mL) salt in a jar with a tight-fitting lid. Secure lid and shake until emulsified. Set aside.

Preheat grill to high, about 450°F (232°C). Brush pork with soy sauce then coat in dry rub.

While grill is heating, place cucumbers in a large freezer bag. Season with remaining 1/4 tsp (1 mL) salt. Seal bag. Using a rolling pin or other heavy object, smash the cucumbers until they lightly crush and split. Refrigerate while you grill the pork.

Grill pork, covered and turning occasionally, until nicely charred, about 8 minutes. Reduce heat to medium-high. Continue cooking pork, turning occasionally, until an instant-read thermometer inserted in thickest part reads 140°F (60°C) for medium, about 4 minutes, or 160°F (71°C) for well-done, about 7 minutes.

Remove from grill and allow to rest while you prepare the salad.

To prepare salad, drain cucumbers in a colander and transfer to a large bowl. Add herbs and dressing and lightly toss. Transfer to a platter, gently pushing the bulk of the salad to the perimeter of the platter. Slice pork into 1/4‑inch- (5-mm-) thick rounds and place in centre of platter. Garnish with sesame seeds.

Sweet Savory Sausage Roll

Sweet Savory Sausage Roll

Pack your picnic basket.  Two easy-to-find supermarket condiments do all of the heavy lifting here. Hoisin, a sweet and vinegary brown sauce full of Chinese five-spice powder, and sriracha, a hot-sweet North American take on a very different Thai sauce by the same name, are both flavor bombs in bottles. A little of each, some garlic, and a touch of honey in the sausage meat result in something you’ll want to eat by the mittful.   Serve with Pineapple Slaw.     Serves 6
Ingredients:
1 1/2 lbs (680 g) lean ground pork
1/3 cup (80 mL) hoisin sauce
1/2 cup (125 mL) bread crumbs
1 tbsp (15 mL) honey
1 tsp (5 mL) salt
1 tbsp (15 mL) sriracha
4 cloves garlic, finely chopped or grated
Freshly ground black pepper
1 sheet pre-rolled frozen puff pastry, thawed
Flour as needed
1 egg yolk, lightly beaten
3 tbsp (45 mL) sesame seeds

Directions:
In a large bowl, combine pork, hoisin, bread crumbs, honey, salt, sriracha and garlic. Add a few grindings of coarsely ground black pepper. Mix with your hands until evenly combined.

Cut a piece of parchment paper roughly the size of a baking sheet. Lightly sprinkle with flour and unroll your puff pastry overtop. Sprinkle pastry with a bit more flour and gently roll out with a rolling pin to lengthen into a 10 x 12-inch (25 x 30-cm) rectangle.

Working lengthwise, leave a 1-inch (2.5-cm) border on one side and arrange the sausage mixture in a log-like roll parallel to the border. Brush border with egg yolk. Using the parchment, lift pastry from the other side and bring into contact with egg-washed border to enclose meat (the ends of the sausage roll will remain open). Use a fork to seal long edge. Carefully transfer parchment and roll to baking sheet and refrigerate for 30 minutes.

Preheat oven to 400°F (204°C).

Score three short slashes on top of roll to vent, brush with remaining egg yolk and sprinkle with sesame seeds. Bake on centre rack for 45 to 50 minutes or until top has developed a deep golden colour. Let cool to room temperature, wrap in wax paper and refrigerate until ready to pack up.

To serve, cut into 12 equal-sized slices.   Serve with a Pinot Gris wine.

Smoked Salmon-Cucumber Bites

Smoked Salmon-Cucumber Bites
Ingredients:
2 teaspoons sesame seeds, toasted
2 teaspoon poppy seeds
1 teaspoon dried minced onion
1 teaspoon dried minced garlic
1/2 teaspoon coarsely ground black pepper
1 1/2 teaspoon flaky sea salt, divided
1/4 cup sour cream
1 tablespoon minced dill plus little sprigs for garnish
Zest of 1 lemon
1 long skinny English cucumber
1 (4 oz.) pkg. sliced smoked salmon, cut into 16 
   strips

Directions:  
In a small bowl, combine the sesame seeds, poppy seeds, onion, garlic, pepper 1/2 teaspoon sea salt.  Stir until combined and set aside.

With a vegetable peeler, peel alternating strips the full length of the cucumber.  Use a sharp knife to cut 16 slices of cucumber on the diagonal.

To assemble:  Spoon a dollop of the sour cream mixture on a slice of cucumber.  Fold or roll a strip of salmon and place it on the sour cream.  And finally, sprinkle some of the seasoning mix.  Arrange the cucumber bites on a platter and garnish then with dill sprigs.

Shishito Peppers

How to Cook Shishito Peppers

This recipe uses my favorite method for how to cook shishito peppers. It’s insanely easy, which makes this recipe a great last-minute appetizer or side dish. Here’s how it goes:

First, preheat a cast-iron skillet over high heat. You want it to be nice and hot when you add the peppers, so let it warm up for a good minute or two. No need to worry about heating oil in the skillet – we’re going to cook the peppers in the dry pan.

When the skillet is hot,  add the shishito peppers in a single layer trying to not have them overlapping.  Give them a toss or two as they blister.
Finally, serve! Drizzle the blistered shishitos with toasted sesame oil and season them with salt. Add a sprinkle of sesame seeds to take them over the top.

Fresh Herb Falafel With Bread
Ingredients:  
For the Falafel
1/2 cup dry (uncooked) chickpeas
1/2 cup dry peeled fava beans (be sure they're the pale, peel dry favas, not the dark unpeeled favas which won't work)
1 teaspoon kosher salt
1/4 cup mint leaves
3/4 cup flat leaf parsley leaves
1/2 cup cilantro leaves
1 small jalepeno, ribs and seeds removed and coarsely chopped or 1/2 teaspoon cayenne pepper
1 clove garlic, minced
1/2 cup coarsely chopped yellow onion (1 small onion)
1/2 tablespoon sesame seeds
1 teaspoon baking soda
Safflower or canola oil, for frying (about 3 cups)

For the Tahini Sauce:
3/4 cup yogurt or laban
1/3 cup tahini (stir before measuring)
1 teaspoon kosher salt
1 clove garlic, green sprout removed and minced
Juice of 1 lemon

Directions:
In a medium bowl, cover the chickpeas and fava beans with cool water by several inches. Soak them overnight and up to 24 hours.

Drain the chickpeas and fava beans. In the food processor, process them with a teaspoon of salt until they are ground to a coarse crumb. Add the mint, parsley, cilantro, jalepneo, garlic, onion, and sesame seeds and pulse until everything is finely ground and the mixture is a fine, web crumb—but not pureed. Transfer the mixture to a bowl, stir in the baking soda, and chill for at least 30 minutes and up to one day.

To make the tahini sauce, process the yogurt, tahini, salt, and garlic until combined. Pour in the lemon juice and pulse to combine. Taste and adjust the seasonings so that the sauce has a nutty flavor of tahini with a bit of the tang of the yogurt.

Heat the oil in a 2-quart saucepan or sauté pan until a pinch of herb dropped in floats and bubbles dramatically. Using an ice cream scoop or a large spoon, pack the falafel mixture tightly in to the scoop to form 2-inch ovals, and fry a few at a time until they are golden brown, flipping them over with tongs as soon as they are browned on one side. Remove the falafel from the oil with the tongs to a paper towel-lined plate, and fry the remaining falafel in the same way.

Serve the falafel hot with the tahini sauce on the side or drizzled over top.

Beautiful Burger Buns

Ingredients:
Buns
3/4 to 1 cup (170g to 227g) water, lukewarm*
2 tablespoons (28g) butter, at room temperature
1 large egg
3 1/2 cups (418g) King Arthur Unbleached All-Purpose Flour
1/4 cup (50g) sugar
1 1/4 teaspoons salt
1 tablespoon instant (9g) instant yeast

*For best results (a smooth, slightly soft dough), use the smaller amount of water in summer (or in a humid environment), the greater amount in winter (or in a dry climate); and something in between the rest of the time.

Butter glaze
3 tablespoons (43g) butter, melted; divided

Seed topping (optional)
1 large egg white* whisked with 2 tablespoons cold water
sesame seeds, or the seeds of your choice

*For added richness and color, add the yolk left over from separating the egg to the dough above.

Directions:
Weigh your flour; or measure it by gently spooning it into a cup, then sweeping off any excess.

To make the dough: Mix and knead all of the dough ingredients — by hand, mixer, or bread machine — to make a soft, smooth dough.

Cover the dough and let it rise until it's nearly doubled in bulk, about 1 to 2 hours.

To shape the buns: Gently deflate the dough and divide it into eight pieces (about 100g each); to make smaller or larger buns see "tips," below. Shape each piece into a ball.

Flatten each dough ball with the palm of your hand until it's about 3" across.

Place the buns on a lightly greased or parchment-lined baking sheet. Cover and let rise until noticeably puffy, about an hour. Toward the end of the rising time, preheat the oven to 375°F.

Brush the buns with about half of the melted butter. To make seeded buns, brush the egg white/water mixture right over the melted butter; it'll make the seeds adhere. Sprinkle buns with the seeds of your choice.

To bake the buns: Bake the buns for 15 to 18 minutes, until golden. Remove them from the oven and brush with the remaining melted butter; this will give the buns a satiny, buttery crust. If you've made seeded buns apply the melted butter carefully, to avoid brushing the seeds off the buns.

Cool the buns on a rack. Use as a base for burgers (beef or plant-based) or any favorite sandwich filling.

Storage information: Store leftover buns, well-wrapped, at room temperature for several days; freeze for longer storage.

Tips from our Bakers
For slightly smaller buns, divide the dough into 12 pieces instead of 8. Bake the buns for 12 to 15 minutes, instead of 15 to 18 minutes. And how about "slider buns" — about 3" in diameter? Divide the dough into 24 pieces, and bake for 12 to 15 minutes.

To make these buns using our hamburger bun pan: Divide the dough into six pieces (about 128g each) and shape them into balls. Place the balls into the lightly greased wells of a hamburger bun pan, and gently press them with your hand to fill the bottom of the wells, or until they're about 3 1/2" to 4" wide. New Lettuce, Beet & Granola Salad

3 medium-size beets, about  12 oz (340 g) total weight
2 tbsp (30 mL) olive oil
Salt and freshly ground black pepper

SAVOURY GRANOLA
1/2 cup (125 mL) roughly chopped shelled raw pistachios
1/4 cup (60 mL) roughly chopped skinned hazelnuts
2 tbsp (30 mL) sesame seeds
2 tsp (10 mL) za’atar
1 cup (250 mL) old-fashioned rolled oats
1/4 cup (60 mL) olive oil
1 tbsp (15 mL) honey
1 1/4 tsp (6 mL) salt
1 egg white
1 large red grapefruit, including 2 tbsp (30 mL) of its juice
1 tsp (5 mL) agave syrup or honey
1/4 tsp (1 mL) salt
1 1/2 tsp (7 mL) red wine vinegar
1/3 cup (80 mL) extra virgin olive oil
Freshly ground black pepper to taste
8 cups (2 L) torn soil-planted living lettuces (about 2) or mixed mini lettuces
2 oz (55 g) crumbled, unripened goat cheese


Directions:

1 Preheat oven to 425°F (220°C).

2 Place beets on a piece of foil large enough to enclose; drizzle with olive oil and season with salt and pepper. Wrap snugly and roast in preheated oven for 60 minutes or until tender. When cool enough to handle, peel beets and cut each into 8 wedges; set aside.

3 Reduce oven to 350°F (180°C).

4 Combine all granola ingredients in a large bowl; stir to thoroughly coat dry ingredients with the wet. Turn out onto a large parchment-lined baking sheet and cook in preheated oven for 30 to 35 minutes or until darkly toasted. Let cool.

5 Using a sharp knife, peel grapefruit and cut into segments, leaving the membranes behind. Cut each segment into 3 pieces and set aside in a small bowl. Squeeze remains of grapefruit over a small bowl and measure out 2 tbsp (30 mL) juice; discard membranes and any excess juice.

6 Whisk in agave, salt, red wine vinegar, then extra virgin olive oil. Season to taste with pepper.

7 Add greens to a large bowl; dress with half the dressing. Toss beets with remaining dressing and top greens with beets, grapefruit segments, then cheese. Sprinkle with about half the granola (save the rest for another use) and serve immediately.

Serves 4 to 6

Crunchy Sesame Seed Candy


Ingredients:
Vegetable oil or nonstick cooking spray, for the pan 
2 cups sesame seeds
1/2 cup honey
1/2 cup brown sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon ground ginger

Directions:

  • Coat a 9-inch-square baking pan or dish with oil or non-stick cooking spray; set aside.
  • Put the sesame seeds into an ungreased 10-inch skillet (preferably one with a non-stick surface) and stir them over medium-high heat for about 5 to 10 minutes, or until they are lightly browned and aromatic.
  • Temporarily transfer the seeds (they will be hot) to a bowl, making sure that none are left in the skillet; set aside.
  • Put the honey, brown sugar, cinnamon, and ginger into the skillet and mix them well.
  • Slowly bring the mixture to a boil over medium heat, stirring constantly.
  • As soon as the entire mixture comes to a full rolling boil, cook it vigorously for exactly 2 minutes.
  • Remove the skillet from the heat and immediately stir in the sesame seeds until well mixed.
  • Quickly turn out the hot mixture into the prepared pan and use a metal spatula that has been dipped into cold water to press the candy into a very smooth and even layer.
  • Cool the candy in the pan for l5 minutes, or until it is solid but still lukewarm.
  • Run the spatula around the edge of the candy to loosen it.
  • Then turn out the whole slab of candy onto a wooden board or other cutting surface.
  • Use a sharp knife to cut the large square of warm candy into very small squares, diamonds, or rectangles.
  • Cool the candies completely; then store them in an airtight container at room temperature.
  • If a professional look is desired, roll each cooked candy in a small piece of stiff cellophane and twist the ends.

Ingredients:
2 eggs
1 pound butter melted
1 3/4 cup sugar
2 teaspoons anise flavor
5 cups flour
2 teaspoons baking powder
1/4 teaspoon salt
2 cups sesame seeds, soaked in a small amount of water

Directions:
Cream sugar and eggs, add melted butter, then flavoring.  Add dry ingredients to creamed mixture.  Roll dough in small balls and roll in sesame seeds.  Roll dough till it forms a small biscuit.  Bake on prepared baking sheets, 15 to 20 minutes at 375*F oven.  Great with wine.

Ingredients:
1 pound fresh asparagus, trimmed and cut into 2-

   inch pieces.
7 radishes, thinly sliced

Dressing:
2 tablespoons olive oil
2 tablespoons thinly sliced green onions
1 tablespoon white wine vinegar
1 tablespoon lemon juice
2 teaspoons honey
1 teaspoon Dijon
1/4 teaspoon garlic powder
1/4 teaspoon grated lemon zest
1/4 teaspoon pepper
2 tablespoons sesame seeds, toasted

Directions:
Transfer to a large bowl; add radishes and sesame seeds. Place dressing ingredients in a jar with a tight-fitting lid; shake well. Pour over salad; toss to coat.

    Think you need dozens of ingredients and hours in the kitchen to create a delicious meal? Our Sesame Chicken Salad begs to differ. Proof that simplicity and satisfaction are anything but opposites, this Asian-inspired salad is loaded with flavor and a snap to make. The bed of Napa cabbage, kale, and carrots offers crunch and loads of nutrients, and cilantro, scallions, and sesame seeds up the flavor ante. For the vinaigrette, you pull out all the stops, but even those are quite simple. A combination of fresh mandarin orange juice, lime juice, toasted sesame oil, and ginger create tang and natural sweetness. Enjoy for lunch or as a simple weeknight dinner.  Serves 4

    Ingredients:
    For the salad:
    2 6-ounce boneless, skinless chicken breasts
    6 cups shredded napa cabbage
    2 cups torn kale leaves
    2 mandarin oranges, peeled and sliced into rounds
    1 carrot, shredded
    3 scallions, thinly sliced
    1/2 cup fresh cilantro leaves
    1 tablespoon sesame seeds
    For the vinaigrette:
    3 tablespoons fresh mandarin orange juice
    1 tablespoon fresh lime juice
    1 tablespoon toasted sesame oil
    1 tablespoon grated fresh ginger
    1/2 teaspoon kosher salt
    Directions:
    To poach the chicken breasts, put them in a medium saucepan and cover with cold water by 1 inch. Place over medium-high heat and let come to a boil. Cover tightly, remove from the heat, and let stand for 15 minutes. Remove the chicken from the water and let cool to room temperature. Refrigerate until ready to use, then shred the chicken.

    In a large bowl, combine the cabbage, kale, orange slices, carrot, scallions, and cilantro.

    In a small bowl, stir together the orange juice, lime juice, sesame oil, ginger, and salt. Drizzle over the salad and toss well.

    Divide the salad among bowls and sprinkle with sesame seeds.

    Ingredients:
    1 cup tomato juice
    1/2 cup pickled cherry peppers, chopped
    2 tablespoons soy sauce
    2 tablespoons hoisin sauce
    1 tablespoon peanut oil
    1 to 2 teaspoons crushed red pepper flakes
    1 pound shredded cooked chicken
    1-1/2 cups chopped onion
    1 cup chopped fresh broccoli
    1/4 cup chopped green onions
    1 teaspoon sesame seeds, toasted


    Directions:
    In a 4- or 5-quart slow cooker, combine the first six ingredients. Stir in chicken, onion and broccoli. Cook, covered, on low until vegetables are tender, about 2 hours. Top with green onions and sesame seeds to serve.
